The use of the finest quality of food commodities has always been a key subject of our philosophy, we try when possible to use products from our territory, in order to promote local commodities and save the environment. To achieve and maintain this quality in all its forms we use Pasta Madre for great leavened products. We have been following for many years Figli di Pasta Madre (FDP) guidelines whose aim is to promote the idea of Lievito Madre and its products.
According to Franco long experience the use of high quality commodities is the key to the best result. His recipe is easy: good and simple ingredients worked with wisdom and passion. These principles have been absorbed by Chiara, his daughter and right-hand person in our pastry artisanal workshop. She succeeded in developing this philosophy and applies it to a new concept of pastry shop.
